Drying fruits and vegetables using solar dryers: Training manual

This manual is a tool used by trainers to train small farmers, and manufacturers, as well as agricultural cooperatives, on drying fruits and vegetables using solar dryers. It aims to enhance beneficiaries’ production capacity, increase their income, reduce food waste and loss, and sustain natural resources in their environment.

This guide provides trainers with basic technical information about drying using solar dryers. Moreover, it provides an educational methodology that includes tools, exercises, and examples. Finally, the guide suggests “assessment tools” to evaluate the comprehension of trainees. The time needed to cover all topics listed in the manual is six hours.
